RECIPE Gluten Free Sausage & Cider Stew

This recipe is perfect for using up old, flat or not very nice cider. And any meat that you may have going spare. Like most of my recipes, this was born out of poverty and needing to use up odds and sods from the fridge - but turned out to be delicious and another I'll definitely add to the recipe folder.

Ingredients

2-3 Sausages (I used Black Farmer Gluten Free Sausages)
1 pack Pancetta cubes (or bacon, pork chops etc)
1 onion, chopped
2-3 carrots, cubed
2-3 potatoes, cubed
1 pork stock cube in 300ml hot water
300ml cider
2-3 cloves garlic, finely chopped
Fresh Rosemary, finely chopped
Fresh Sage, finely chopped
2-3 bay leaves
Black pepper
Cornflour

Method

Fry the meat in 2-3 tablespoons oil.
Remove the meat after it has browned on the outside but not cooked all the way through. (Cook the sausages whole and slice once browned off).
Fry onion and garlic in the leftover oil until soft.
Add the rest of the ingredients and stir thoroughly.
Cover and put in an oven at 175c for around 45 mins.
Remove from the oven and add 2-3 teaspoons of cornflour diluted in cold water.
Stir thoroughly.
Return to the oven for a further 15 mins.
Serve with bread (I like DS Brown Ciabatta Rolls.)

  1. Sausages in cider - this is a family favourite of mine. The only thing my dad needed to change was the sausages (I like the "Debbie and Andrews" Harrogate GF ones that tesco sell).

    To make it taste even more cidery we add some slices of apple which go all soft.
