I imagine that I’m not the only one struggling with finances this month. I have a few favourite things to cook when I’m watching the pennies. One of which is Jollof. I actually can’t believe I’ve not posted about it before, especially as me and my husband eat it every month (towards the end, before pay day!)
Ingredients
Tropical Sun’s ‘Jollof’ seasoning 99p -
(Contains Salt, Sugar, Onion, Ginger, Yeast Extract, Coriander, Thyme, Garlic, Chilli, Green Bell Peppers, Cinnamon, Bay.)
1 Onion
2 cloves garlic
2 tins tomatoes
Tomato Puree
Rice
Meat (any meat really, I usually use sausage or chorizo, the more flavoursome the better)
Chillis (not essential or on the instructions but we always add them for an extra kick)
Vegetables (such as bell peppers or okra)
Follow the instructions on the packet (I didn’t know exact quantities off the top of my head but they’re all on the pack). Takes about 45 minutes to cook all in one big pot.
If you can get hold of reduced packets of meat in the supermarket i.e bits of ham, chorizo from the deli counter, this meal becomes super cheap!
Also, I’ve tried to make this using spices and herbs from the cupboard and it’s not the same, the Jollof seasoning is the only thing that works.
