RECIPE Gluten Free Fairy Cakes




















I regularly make gluten free fairy or cupcakes using the Doves Farm Gluten Free flour from Tesco but for a friend’s birthday a couple of weeks ago, I made chocolate ones and I was very pleased with how well they came out.

Firstly you need a bag of plain gluten free flour, such as this one http://www.mysupermarket.co.uk/tesco-price-comparison/Flour/Doves_Farm_Gluten_Free_Plain_White_Flour_1Kg.html from Tesco.

This one has a recipe on the back for Victoria Sponge. I follow this recipe and adapt it to make the fairycakes.

The recipe I’m posting here is slightly modified from the packet to make the cake chocolatey and less buttery.


Makes about 12-15 cakes.


Ingredients


75g Butter

75g Margarine

½ teaspoon Vanilla Extract

2 eggs

1 teaspoon Baking Powder

125g Gluten Free Plain White Flour

25g Cocoa Powder

3 tablespoons Milk


Method


Cream the butter, sugar and vanilla together until light and fluffy.

Beat in the eggs one at a time

Beat in the baking powder, flour and milk

Divide the mixture into cake cases in a fairy cake tin

Bake in a pre heated over for 15-20 minutes



To Decorate


Melt a medium sized bar of dark chocolate in a bowl over boiling water. Spread over the top of the cakes.

Finish with chocolate sprinkles! Leave to cool and for the chocolate to harden.
