Gluten Free Christmas Dinner - Stuffing, Gravy & Yorkshire Puddings

I'm staying at my mum's for Christmas this year and I didn't want her to worry about cooking special things for me on Christmas day. So, I've decided to cook it all myself (with Hubby's help.)

For me, as long as the stuffing, gravy and Yorkshire puds are awesome, all is well :)

This is the stuffing I'm planning to make;


4 rashers streaky bacon, snipped into small pieces

1 large onion, peeled and sliced

50g butter

250g Gluten Free bread

Large handful of Parsley

2 eggs

Salt & Pepper

150g cooked chestnuts (the vacuum packed ones are excellent)


Fry the bacon and onion in the butter until the onion is transparent

Whiz the bread and parsley in a blender until breadcrumbs are formed.

Add the bacon and onion, eggs and seasoning.
Blend until combined, then tip into a bowl.

Roughly chop the chestnuts and stir into the bacon mixture.

Either pack the stuffing into the neck of the turkey before cooking or roll it into balls.

If baking as balls, oven cook at 190 degrees C for 20 minutes.
