RECIPE Gluten Free Jerk Chicken

No cupboard should be without a packet of Jerk Seasoning.
As I discovered last night, when you're all out of food inspiration, Jerking up some meat is the answer! (My, I seem to have turned into Levi Roots!

I made this recipe last night using bits and pieces already in the house and it was so lush, I though I'd share it with y'all.

Serves 2-3


3 or 4 chicken breasts
2 tspns Jamaican Jerk Seasoning (I used Tropical Sun from Tesco
1 tbspn ketchup
1 red chilli (makes it fiery! De-seed if you’d prefer it milder)
1 thumb sized piece of ginger
3 cloves of garlic
3 tomatoes
3 or 4 mushrooms


Chop finely the chilli, ginger and garlic
Chop mushrooms and tomatoes into slices
Cut chicken up into big chunks
Boil 3-4 handfuls of rice and some frozen peas

Fry chilli, ginger and garlic for a couple of minutes, then add mushrooms and tomatoes.
After 2/3 minutes, add chicken and stir.
Fry lightly with lid on (keep stirring though) for about 4 minutes.
Add seasoning and ketchup and stir.
Put lid back on and cook for a further 6 minutes or until chicken has cooked through.

Serve with rice and peas!

Really quick and easy, wheat free and tasty!
